Chef Eric Aldis

Chef Eric Aldis was born and raised in Gonzales, Texas and went to high school in Katy, about an hour away. He had a big family, so cooking was always one of his chores although it never felt that way to Eric. If Eric wasn’t out swimming in the rice well, fishing in the bayous, or playing ball, he was cooking. When he got older, he was always grilling or creating excellent sandwiches for himself and his buddies. Chef Eric has been cooking since he was very young. He was inspired by his mom who is still his biggest fan today. His first job in a restaurant was at Barcelona Fine European Dining in Katy, Texas. He started as a busboy and then promoted to a dishwasher starting the culinary journey he remains on today. His favorite food to cook is breakfast because he loves how many dishes he can make with eggs! Chef has won many accolades over the years and has recently been nominated by for 2020 Best Chef!

Chef Aldis attended culinary school at The Art Institute of Houston and has worked at many restaurants, including some very well-known AAA Five Diamond Resorts. He feels these were the restaurants where he learned the most by getting to cook in the best kitchens with all the best cooking equipment and modern conveniences. Cooking with some of the most famous and well-known chefs from around the world and creating a variety of foods using only the finest and freshest ingredients exposed him to international flavors as well. Some of the restaurants he worked at include Double C Resort, Château de Bayou, and Ritz Carlton – New Orleans were three restaurants he helped open. He also had the pleasure of re-opening Beau Rivage in New Orleans post-Hurricane Katrina after they suffered such catastrophic damages in 2005. His favorite and most exciting experience was at Bellagio in Las Vegas, Nevada.

Chef Aldis has also cooked for Mo’s, Waterman’s, and many others over the years and is now the Executive Chef & General Manager at The West End Marina Restaurants and Bars located in the West End of Galveston, Texas. He is excited to bring his energy and a new and unique menu with a Texas Gulf Coast Cantina flare with a comfort twist. After hearing what people want since he arrived helped him create what the people want in Galveston.

Chef Aldis invites you to try The West End Restaurants and Bars where you can choose to dine upstairs or downstairs, and coming soon is the brand new Frozen Drink and Tap Bar with so many choices! Our frozen drinks are made using only the best liquor including Bayou Rum, Jose’ Cuervo, and Tito’s to name a few. The tap bar will include all your favorites and local craft beer, too. The West End Restaurants & Bars will soon be your new favorite place in West End Galveston, located in The Sea Isle subdivision. We’ll see you soon!
